Alayna’s Mermaid Cake When She Turned 1 Years Old…

Marshmallow Fondant:

To make marshmallow fondant, place 1pack of marshmallows(200g), I used candy lady ones and 1 tablespoons of water in a microwave-safe bowl.

Microwave 30 seconds on high; stir until mixed well. Continue microwaving 30 seconds more; stir again. Continue until melted.

Add 1 cup of the confectioners’ sugar in a bowl and make a well. Pour the marshmallow in it. Fold sugar into marshmallow mixture. Flavoring can be added at this point if desired. If you wish to colour the fondant, add the colour to the melted marshmallows before adding the icing sugar.

Place solid vegetable shortening(crisco) in easily accessed bowl so you can reach into it with fingers as you are working. Grease hands and counter GENEROUSLY; turn marshmallow mixture onto counter. Start kneading like you would dough. Continue kneading, adding additional confectioners’ sugar and re-greasing hands and counter so the fondant doesn’t stick.

It’s best to allow Marshmallow Fondant to sit, double-wrapped, overnight. Prepare the fondant for storing by coating with a thin layer of solid vegetable shortening, wrap in plastic wrap. Squeeze out as much air as possible. Marshmallow Fondant will keep well in refrigerator or in outside in air tight box for several weeks.

Your Fondant is ready to use.. knead it once more before using and roll it…

It should be big enough to cover the cake. Spread it on top of cake and trim off the excess.



You should use gel colors (Wilting or Americolor) for colouring the Fondant… If you plan on colouring your fondant pink, yellow or orange, buy marshmallows in that colours to avoid having to colour it later…
