Malt Cake is among the Richest Chocolate Cakes… Malted milk powder is the secret ingredient to this Yummy Cake… So Here Goes The Recipe… 👇
Ingredients for the Cake:
Eggs (large) – 1 ½
Sugar – ½ cup + 2 tbsp
Vegetable oil – ½ cup
Sour cream (Cream – ½ cup + lemon juice – 2 tbsp) – ½ cup
Vanilla extract – ½ tsp
All-purpose flour – 1 cup + 2 tbsp
Unsweetened cocoa powder – 6 tbsp
Baking soda – ½ + ¼ tsp
Baking powder – ½ tsp
Salt – ¼ tsp
Malted milk powder – ½ cup
Milk – ½ cup
Ingredients for Malt Frosting:
Butter (softened) – ½ cup (1 stick)
Unsweetened cocoa powder – ¼ cup
Heavy whipping cream OR tetra pack cream – 6 tbsp
Malted milk powder – ¼ cup
Icing sugar – 1 + ½ cups
Cream cheese – 2 tbsp
Pre-heat oven to 350*F.
Grease 9 inch spring foam pan(s) (if you are making two cakes) with flour. Dust off the extra flour.
In a large bowl, beat eggs and sugar till creamy.
Add oil, sour cream, and vanilla essence. Beat again…
In a separate bowl, sieve all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
Gradually, fold the dry ingredients in the egg mixture…
Dissolve malt powder in the milk.
Fold it into the mixture.
Pour the batter evenly into the prepared pan(s).
Bake the cake(s). It may take up to 30 to 40 minutes…
After 20 minutes, insert a toothpick to check if the cake is fully done.When done, cover the cake with a kitchen roll towel…
Let the cake cool in the pan… When the cake gets cool enough to leave the sides of the pan, take it out and place it on a wire rack to cool completely (for 1 or 2 good hours).
For Malt frosting, beat together softened butter and cocoa powder until creamy…
Add cream, malted milk powder, icing sugar, and cream cheese. Beat again until smooth…
If you happen to prepare the frosting earlier, you can keep it in fridge…
If it comes out frozen (because of butter), then slightly microwave it. Don’t microwave too much. We want frosting at room temperature, not hot…
When the cake has cooled completely, cut the cake carefully with a sharp knife horizontally through the center of the cake (if you baked one cake).
Level off the cake(s) from the top for a flat surface.
Place the cake on the plate (or any surface) in which you want to serve…
For smooth application of frosting, take a tall glass of hot water and a blunt knife. Drop dollops of frosting on the layer of the cake, dip the knife in the hot water, and starting from the edges, start buttering the frosting. Keep dipping your knife in the water time to time, and keep rotating your plate and knife till the center is also properly frosted.
Drop more dollops as needed…
Then keep the top layer of the cake over it and repeat the frosting as mentioned above. Start from the edges and finish at the center…
Lastly, frost the sides of the Cake…
Refrigerate the cake for 4 to 6. Serve Chilled…
